While we may not always be aware of it, you and me are constantly attacked by germs, that live around us in the air we breathe, objects we touch (keyboard, telephone, door knobs, gym equipment) or food we ingest that has not been properly sanitized.
There is a reason why we don't think about sanitation: under normal circumstances our immune system is perfectly capable to defend us against invading viruses and malicious bacteria.
Although our immune system is highly effective, it can become overwhelmed due to exposure to a too large amount of unfamiliar bacteria strains (different job, school or city) or even common ones in case our immune system is weakened. Then germs may prevail over the beneficial bacteria and you'll end up sick or, in more serious cases, dead.

Nearly everyone will have experienced a mild stomach 'flu' , but few will have had a huge health scare like I've faced in 2004 when I got extremely ill from improperly cooled and re-heated spicy chicken soup. Too spicy to notice how the soup didn't taste the way it should.

With a healthy immune system this would have caused a severe stomach flu at most. Instead, due to a seriously weakened immune system from too strict dieting, extreme-distance cycling and gluten intolerance, the bacteria was able to pass the (leaky) gut boundaries and end up in the lower spine, where it ate away most of the cartilage at the L5-S1 joint. Had it been discovered later, I might have been paralyzed.

One of the lesser known functions of beneficial bacteria is to provide mucoproteins that form an intestinal barrier against harmful organisms. Breakdown of gut lining will happen faster when that person is intolerant to gluten (mostly from wheat) or lectins (from beans). Or simply by taking a large amount of antibiotics. Then both bacteria, viruses as well as toxins can invade the body and cause all kinds of problems, including that rare spine infection or more commonly, a host of auto-immune disorders like rheumatoid arthritis.
